Who likes fried food? [
If you answered yes to both of this questions, which you should have if you are sane and breathing, then I have quite the scrumptious treat for you.
Fried Banana Nuggets
Ingredients
Directions
1. Crush pretzels in sandwich baggie
I initially used the old "karate chop method" which became slightly painful, so I implemented the rolling pin technique which worked much better.
2. Cut banana in half (width wise) then cut each half in to about 1/4 inch thick slices.
be sure not to make the slices too thin! The bananas get slightly melted during the cooking process so if they're too thin they won't retain their shape. Got it?! Good.
...but I digress...


m'mmm.. I suppose you could even eat them now as is, but I decided to pop them in the toaster.

I'll be honest, the temperature/time was a total crap-shoot. I had no idea how hot or how long to cook these for, but 350 for 10 minutes seemed just about right.

The banana slices actually ended up being a little bigger than I thought, so they were more of a banana "finger" than a nugget.. or possibly even a banana "tender". Definitely too small to be considered a banana "cutlet" though..
...but I digress...
3. Pour crushed pretzels on a plate, add 1-2 tsp of cocoa powder and mix it all up with your hands to incorporate
4. Dredge each banana "nugget" in pretzel/cocoa mixture.
the pretzels should stick fairly easily on their own but you may need to press them in to the bananas. m'mmm.. I suppose you could even eat them now as is, but I decided to pop them in the toaster.
5. Bake at 350 degrees for about 10 minutes

y'all, I hate to toot my own horn. (who am I kidding? no I don't..) but these were quite possibly the best thing I've ever made in my life. The bananas got soft and caramelized from the cooking process but the pretzel coating was crispy and salty and added a great contrast to the sweet bananas. My taste buds are still singing.
Now I'm sure your all wondering how I was able to create such a delicious treat today, what with it being Thursday which is normally a school day for moi. Well, in honor of "Just Being" week [yes, I've dubbed it an entire week long celebration] I decided to take off from school today. Now that could've been me "just being..." too enthralled in trash TV last night to finish my Spanish homework for today, or "just being..." too tired to wake up this morning, but I think I'll go with me "just being..." overly stressed from all the work I have due next week and needing to take a day off to regroup, get things done, and maintain my sanity. Yeah, I'll go with that.

Great little recipe. The look awesome for a nice healthy dessert. My favorite way to eat bananas are in oats and on top of waffles with PB. After I try your recipe, it might be a "fried" fan too.

Favorite way to eat bananas = sliced in half, topped with nut butter, sea salt, and granola. Eaten with a fork. Yummm.

Ummm....you should be on Chopped. I was watching a recorded one from earlier this week and they had bananas/plantains as one of their secret ingredients and one of them fried it(like so)......BUT this looks about 100000X more creative and 392084589782X more delicious than anything that they made! So...I will most definitely be *trying* to make this when I get home! ;)

I love any excuse to eat a banana with peanut butter. Great idea with the pretzels. I often do little banana boats with pb and vegan choco chips. totally bomb.com.

Banana soft serve. I'm not a huge banana fan. I get it. I've had a rough week with school, family pressure and have not been a good eater. I definitely need a break though. Good for you for taking one!

After it's in the fridge for some chill time, I had cereal and mix it all up. LOVE it. It would probably be even better with some choc chips in there--eek!

Great work hon! I think that using the EnviroKidz cereals, like the Koala Krispies or whatever they're called (or any cereal you have on hand) would totally work too. I am gonna make these for Skylar, she will love em!
Fave way to eat bananas? Pulverized and smooshed inside oats, and protein powder in my own adaptation of the brekkie cookie.
Or else the "long way" like you sliced yours. The surface area like that makes the banana taste sweeter and I love it like that. Great minds clearly think alike :)
Oh and yes, I do have a tat on my foot re your comment the other day. It's an Om symbol. I've had it for about 7-8 yrs or so now. God, I'm getting old. Namaste, love.

So, whatever you choose to write about, I will be all eyes and ready to read and opine. The other thing is this -- neither you, me or anyone else or their mamma is defined solely by their struggles. Just because you are recovering does not mean that every breath you breathe should be spent paying service to that recovery. Life is full of such an endless array of emotions, struggles, triumphs, etc. Some of them are consistent and others fleeting, but the beauty of it all is that at every moment we may choose what to give our energy to and what type of energy we give to it. You give such a radiant and positive energy to all of your readers that I, personally, appreciate. It's not that you have to be "on" at all times, or even that your positive energy could ever trivialize the "realness" of your life -- it simply tells me and the world that you are a fighter. and a beautiful one at that.
